Directions:  
Bring a large pot of salted water to a boil. Add noodles and cook for 5 minutes. Reserve 1 cup of cooking liquid. Add torn spinach and press to submerge. Drain.
Set pot over medium heat and add 5T butter stir while the foam subsides and the solid turn golden brown and small nutty. Add the pepper and stir until fragrant.
Add 1/4 cup of the reserved water, noodles, spinach, soy sauce and sugar.
Toss until the sauce thickened and silky. Add cooking water 1 T at a time until the sauce coats the noodles.
Remove from heat and stir in the remaining tablespoon of butter and the sesame seeds. Season to taste with more soy sauce, pepper. Add more sugar if too salty.
